Update docs for cloud maintained collections (#74373)

- AWS has moved to Zuul CI
- Kubernetes collection has been renamed
- OpenShift/OKD collection was missing
- ansible.windows is on Zuul and Azure Pipelines
- ansible.posix is on Zuul
